Cranberry Orange and Other Stuff Super Loaf

So I have a whole bunch of cranberries in my freezer left over from Thanksgiving....hmmm....I've eaten a couple of them raw because they taste like really sour candy and they taste like really sour candy. You ever had war heads? These are the natural kind of warheads, minus the sweet centre.


Cranberries are great for cooking with because they are basically 100% fiber wrapped around vitamin C and a ton of antioxidant power. They have a tartness that can complement sweet dishes or give an extra bite to another dish. Roasting or baking, add a bunch of cranberries and see what happens!

Cranberry Orange and Other Stuff Super Loaf


2 cups all purpose flour
¼ cup bran
¼ cup large flake oats
1 tsp baking powder
¼ tsp baking soda
½ tsp salt
1/3 cup flax seeds
1 medium orange
1 egg
¼ cup water
1 frozen banana
1.5 cups frozen (or fresh) cranberries
¼ cup chopped, dried plums (i.e. prunes!)
¼ cup chopped, dried dates


1. Preheat oven to 350F
2. Mix flour, bran, oats, baking powder, baking soda, salt, flax seeds in a mixing bowl and set aside
3. Heat frozen banana in microwave for 1 minute until it is really soft. Finish it off by mashing it with a fork and making it really soupy- add it to your blender.
4. Place orange (peeled and halved), egg, water in blender with banana. Blend until smooth and add to dry ingredients. Mix well.
5. Fold in cranberries, dried prunes and dates. Place mixture into a parchment paper lined loaf pan and bake for 35 minutes (or until toothpick can go in and come out clean!)
6. Enjoy for a hearty breakfast, a quick snack or as a side dish!
